These grain-free pancakes are naturally sweetened with bananas and incredibly fluffy. They're perfect for a weekend breakfast treat!
Instructions
- In a large bowl, mash the ripe bananas until smooth.
- Add eggs and vanilla extract, whisk to combine.
- In a separate bowl, mix almond flour, coconut flour, baking powder, cinnamon, and salt.
- Add dry ingredients to wet ingredients and stir until just combined.
- Heat a non-stick skillet over medium-low heat and add a small amount of coconut oil.
- Pour about 1/4 cup of batter per pancake onto the skillet.
- Cook until bubbles form on the surface and edges look set, about 3-4 minutes.
- Flip carefully and cook for another 2-3 minutes until golden brown.
- Serve warm with fresh berries and a drizzle of maple syrup or honey.
