These grain-free pancakes are naturally sweetened with bananas and incredibly fluffy. They're perfect for a weekend breakfast treat!

Instructions

  1. In a large bowl, mash the ripe bananas until smooth.
  2. Add eggs and vanilla extract, whisk to combine.
  3. In a separate bowl, mix almond flour, coconut flour, baking powder, cinnamon, and salt.
  4. Add dry ingredients to wet ingredients and stir until just combined.
  5. Heat a non-stick skillet over medium-low heat and add a small amount of coconut oil.
  6. Pour about 1/4 cup of batter per pancake onto the skillet.
  7. Cook until bubbles form on the surface and edges look set, about 3-4 minutes.
  8. Flip carefully and cook for another 2-3 minutes until golden brown.
  9. Serve warm with fresh berries and a drizzle of maple syrup or honey.
